Ingredients

  • 2 Zucchini
  • 6 Cherry Tomatoes
  • 1 lb Shrimp (around 20)
  • 4 Garlic cloves
  • Oregano
  • Salt
  • Pepper
  • 0.5 tbsp Olive oil
  • 1 tbsp Butter

Instructions

  • Use a julienne peeler to make thin strips of zucchini. Please use caution and peel away from your hands.
  • Sauté the zucchini for 1-2 minutes in some olive oil and season with salt and pepper. Set aside.
  • Mince garlic, cut the tomatoes into halves and prpare shrimp for cooking in the meantime.
  • Add butter to the same pan and sauté minced garlic.
  • Add in tomatoes and shrimp and season with oregano, salt and pepper. Cook for about 5 minutes or until shrimp is cooked and the juices from shrimp and tomato are reduced
  • Serve the shrimp on top of zucchini noodles and enjoy!
