Zucchini Shrimp Scampi

Ingredients
- 2 Zucchini
- 6 Cherry Tomatoes
- 1 lb Shrimp (around 20)
- 4 Garlic cloves
- Oregano
- Salt
- Pepper
- 0.5 tbsp Olive oil
- 1 tbsp Butter
Instructions
- Use a julienne peeler to make thin strips of zucchini. Please use caution and peel away from your hands.
- Sauté the zucchini for 1-2 minutes in some olive oil and season with salt and pepper. Set aside.
- Mince garlic, cut the tomatoes into halves and prpare shrimp for cooking in the meantime.
- Add butter to the same pan and sauté minced garlic.
- Add in tomatoes and shrimp and season with oregano, salt and pepper. Cook for about 5 minutes or until shrimp is cooked and the juices from shrimp and tomato are reduced
- Serve the shrimp on top of zucchini noodles and enjoy!
