Tofu Beet Burger

Ingredients
- 1.5 cup cooked beets (300 g)
- 1 block extra firm tofu
- 1 inch ginger
- 0.25 cup peanuts
- 1 tbsp flaxseed meal
- lettuce
- pickles
- sauce of your choice
- multigrain burger buns
Spices
- 0.5 tbsp crushed fennel seeds
- 1 tbsp paanch phoron
- 1 tbsp garam masala
- 1 tsp chili powder
- salt to taste
Instructions
- Place the tofu block between paper towels and put a weight on top of it to squeeze the moisture out of it. Let it sit for 30 minutes, changing the paper towels if they are soaked.
- Mix 1 tbsp flaxseed meal with 3 tbsp water. Set aside for a few minutes till it forms a gel.
- Toast peanuts and set aside to cool down.
- Grate or thinly slice the cooked beets, ginger and tofu
- Mixed together the grated beets, tofu, ginger, spices, peanuts and flax egg.
- Form patties and air fry on 400 F for 15 minutes.
- Toast the burger buns. Apply sauce of both slices and layer with lettuce, patty and pickles.
